Our methods
A wine of quality because produced using the best tools and most dedicated people
In the vines as well as in the winery our methods are of true quality.
Our plantation density in the vines is of 6 000 feet per hectare: we control the yield, disbudding, “green harvest”, selection of the best bunches by hand grape picking and strict sorting at the winery. The result is a production of only 6 000 bottles per hectare, that is to say one bottle per “cep” (base of wine).
At the winery for the red we vinify at low temperature so to extract the very best of the fruit, its finest anthocyanins and tannins. We do a separate vinification for each plot in order to keep only the best ones for our first wine Château La Naudine. The oak aging lasts 12 months and the barrels are used three times.
For the white wine the grapes are immediately pressed, we let the must of the juice settle during the night preserving a high turbidity, in order to vinify well the wine “on the lees”: in barrels to express all the complexity of the Semillons and in stainless steel vats to protect the fruit and the freshness of the sauvignons. After the blending we obtain a typical Graves with freshness, fruit, complexity and harmonious fine wooden notes, the whole well balanced with a lot of finesse.
